How long should you use the same cutting board

Every kitchen has at least one cutting board. Available in a multitude of shapes, sizes and materials, no cooking adventure starts without a trusty cutting board. Yet most of us barely give them a second thought, and we really should…
Like most kitchen accessories, chopping boards don’t live forever. In fact, because they are used so frequently and come into contact with all sorts of raw and cooked food, their lifespan can be limited and it is vital to regularly monitor their condition.
So how do you know when it’s time to replace your cutting board? Well, it depends on the material that it’s made of. Most boards are made out of plastic, which can turn porous over time and harbour nasty bacteria that can be hard to get rid of.
The best type of cutting board is made out of bamboo. They’re are easy to clean, environmentally friendly and even enhance the décor of your kitchen.  To get the longest use out of your bamboo chopping board:

Clean it as soon as possible after use;
Never put it in the dishwasher as this could lead to warping;
Hand-wash in hot, soapy water with a normal kitchen brush or sponge;
If stained, apply some salt on a wet sponge in order to lift the stain;
For added protection, apply a few drops of vinegar to a final wipe over of the board. This is particularly good after preparing raw meats;
Dry immediately after washing;
Apply a coating of warmed mineral oil every 2 -3 weeks in order to maintain the condition;
Store the cutting board in an upright position to avoid any bacteria sitting on the board.

How often cutting boards should be replaced is also dependent on the frequency that they are used and how well they are maintained. If your cutting board is warped and no longer sits flat on the counter; contains deep cuts or cracks that allow bacteria to live and breed; or contains stains that cannot be removed, then it’s time for a new one!
